There could be a number of reasons, but one common reason is a mismatch of data category. Profile and Other type DLOs can be mapped to Profile and Other (i.e. you can mix and match), but Engegement can only be mapped to or from Engagement. Note that it is possible to manually change the category of a DMO (Profile -> Other, or Other -> Profile) in some cases.
